Guilt-Free Crispy Cauliflower Bites

Crispy Baked Cauliflower Bites

1 head medium cauliflower (around 23 oz./650g), florets
5.3 oz. (150g) all-purpose flour
2 tsp. garlic powder
1 tsp. dried thyme
1 tsp. dried basil
½ tsp. paprika
4 oz. (120ml) oat milk

Preheat the oven to 425°F (220°C). Line a baking tray with parchment paper. Separate cauliflower into florets.


In a large bowl, mix all remaining ingredients, adding 4 oz. (120ml) water, season with salt and pepper. Dip each floret into the batter, shake off the excess, and place on a baking tray. Avoid overcrowding or pouring extra batter over the florets.


Bake for 15 minutes, flip each floret, then bake for another 5-10 minutes until golden and crispy. Serve with the Creamy Vegan Ranch (page 27).
