
This is such a great recipe, as adding some crunch really enhances this dish. If you prefer a white fish something firm like barramundi (if you are in Australia) will work beautifully!
Ingredients:
1 tbsp Lemon Herb Seasoning
⅓ cup (20g) parsley, chopped
¼ cup (25g) breadcrumbs
1 medium egg, whites only
1.4 lbs. (650g) salmon fillet
salt and pepper
Method:
- Preheat the oven to 200°C (400°F). Slice the lemon. In a bowl, mix lemon herb seasoning and chopped parsley. Add the breadcrumbs and season with salt and pepper.
- Whisk the egg white and mix in with the breadcrumb mixture. Place the salmon on a lined baking tray and season with salt and pepper. Top the salmon with the breadcrumb mixture.
- Bake the salmon in the middle of the oven, for 15 minutes, until cooked through. Remove from the oven, place on a serving dish and serve immediately with lemon slices.
